The Maker Series: An Italian-trained chef inspired by slow California living. 

Melissa Norton, the Italian-trained chef behind Cucina Melissa, is the first in our series highlighting makers in our community. With a focus on slow food, Melissa combines fresh ingredients and heritage knowledge to create culinary magic. Here at Anna Beck, we celebrate the beauty of connection and honor artisan techniques. That’s why we’re excited to spotlight creators, like Melissa, who inspire us with their commitment to their craft. 

We sat down with her to learn more about the beginnings of Cucina Melissa, her relationship to cooking, what informed this belief system, and so much more.

Can you share your unique background and what inspires your process?

Before I went to study in Italy, I knew so little about food and the slow food philosophy. Italy changed the way I view food and dining culture as a whole. The beginnings of Cucina Melissa started in Calabria, Italy when I realized that pleasure is the #1 ingredient in the way Italians live and eat. My philosophy for Cucina Melissa revolves around that sense of pleasure and mastering the art of taking time to enjoy a long meal, a long cooking process, and a beautiful dinner table filled with wonderful conversation.

What is your favorite recipe to make? Do you often source fresh ingredients from your garden? 

This changes monthly! Right now, anything with tomatoes. I'm a nut for summer tomatoes. I've been making Panzanella with garden-grown basil and super juicy heirlooms from the farmer's market. I also love making simple tomato pasta in the summertime with lots of Parmigiano.

Can you share three of your favorite places to eat in LA—and a favorite dish or drink from each? 

Spaghetti Ricci di Mare at Angelini Osteria with a glass of Verdicchio, A cheeseburger from The Window, pizza and dessert from Bestia, a Tuna Conserva sandwich from Gjusta, and LA's taco trucks! These are unmissable spots.

Let’s talk about your personal style—what is your approach to accessorizing? 

I keep my wardrobe simple and classic so I can have fun with shoes and jewelry. Great jeans, a crisp white button-down with a cute pair of heels, and dainty gold jewelry are my go-to.

 

Do you have a favorite piece of jewelry or mainstay from your collection?

I inherited a gold diamond bracelet from my late Grandmother. I wear it every day.
